What are core temperature probes?
Core temperature probes are rugged insertion probes that have been specially designed to measure the temperature inside a food item—that is, at its “core.” Unlike surface probes, their stainless steel tip penetrates directly into the product, providing an exact indication of whether the entire core has been sufficiently heated, cooked, or cooled. This is particularly crucial in food processing: Only when the core temperature is correct are pathogens reliably eliminated and quality guaranteed.
